Let me introduce my 2-ingredient pancakes with homemade blueberry syrup!

Pancakes:

1 egg, 1 banana

For one person (double for another person, triple for two more), blend 1 egg and 1/2 banana for a few seconds in a personal sized blender. Add 1/4 more of the banana cut into pieces for the batter. Cook in a medium pan until flippable and golden! Makes 3 pancakes.

Syrup:

1/2 cup blueberries, 1/4 cup organic honey, 1/2 lemon, 1/2 cup water

In a small saucepan, mash 1/2 cup blueberries with a potato masher. Add the 1/2 cup of water and put the heat on high. Squeeze in the juice from 1/2 of a lemon and add the honey. When it comes to a boil, bring the heat down to a simmer and leave for 10 minutes, stirring occasionally. Pour over pancakes and store the rest for up to 1 week!

Voilà!

You can always use any syrup you’d like, but mine had expired. So, I had to innovate!
