Breakfast Tacos!


If you haven’t realized by now, I am obviously a HUGE fan of breakfast! This breakfast takes only about 5-10 minutes to make.

Breakfast Tacos

Ingredients: 2 corn tortillas, 1/4 avocado, 2 cage-free eggs, 2 slices colby jack cheese

Today, I used coconut oil to spray my pan with for my scrambled eggs. While that was cooking, I heated 2 corn tortillas in the microwave for 30 seconds, sliced 1/4 of an avocado and stored the rest in an air-tight container with lemon juice so that it won’t brown, and sliced 2 pieces of cheese from a block of colby jack. These tacos are delicious. You can always use flour tortillas or add salsa or any condiment to taste!
