Hidden under the eggs over medium, is the powerful kale. This dish was a fairly-priced, healthier option at the ArtClif Diner in Vineyard Haven, Martha’s Vineyard. Don’t get me wrong, I love a plate of eggs, hash browns, and toast, but this time I wanted a taste of something different. My dish contained chicken broth with diced onions and tomatoes, chickpeas galore, kale, eggs, and some greens to top. I added a slice of avocado to it for a fresh bite. It was so good! Not your traditional breakfast, it was the perfect change. I may try and recreate this one at home!
