Open-Faced Avocado, Artichoke, & Tomato Sandwich with a Pimm’s and bottled water on the side, please! This made for the perfect lunch by the water while I was in London, England. Actually heading out to ride some paddle-boats in Hyde Park, we stumbled upon Serpentine and decided to sit outside and watch others paddle by instead. Boy, was that a great idea. The sandwich was the perfect size and I really didn’t want it to end. Happy hour was the happiest and I would go back in a heartbeat.

Remake this sandwich!

Ingredients: grilled baby artichoke, avocado, sun-dried tomato, red chard, grilled carrots, red pepper tapenade and focaccia bread.
